Mouriès has always been the premier olive-oil producing commune in France. The valley still contains many mills and offers a choice of prestigious oils, but the one that Mouriès is most proud of is its Baux Valley of Provence Extra Virgin AOP Olive Oil.
This oil is a basic ingredient in Provençal cuisine and is used to flavour many traditional specialities, such as anchoïde, as the name implies an anchovy based spread, paste-like caviar d’aubergine, caramelized tomatoes, black and green tapenade, pistou (similar to pesto) soup – all packed with sunny flavours.

The freshness and uniqueness of the local produce enable local chefs to marry innovation with tradition to create convivial Mediterranean tipped meals.
